As you probably know by now, I prefer to bring my own food to work, I care about what I eat and I try to eat as healthy as I can. Today, I had a Spicy Red Lentil Soup with carrots, onions, chili and garlic, lots of garlic.

Garlic has many health benefits, especially if you feel that you have a cold coming, it is believed that garlic can help you reduce common cold by up to 63% it is also thought to reduce blood pressure and prevent Alzheimer’s disease and dementia, overall it´s good for you, it tastes delicious, but never ever eat it before a date 😆 it gives you a terrible breath, today that was not a problem for me as I was planning to go home straight after work and to bed, I did, however, apologize to the Captain for stinking….which he gave me a mint chewing gum for! Enough about that, when I cook, I never … or very seldom use a recipe, I mix a little bit of this and a little bit of that, depending on what my fridge has to offer, but as many of you asked me how much I take off each ingredient, I thought I’d write down approximately what I use, but feel free to mix what you want, add or remove something you don’t like.
For 4 portions:
2 cups of red lentils (mix with 5-6 cups of water)
4 garlic pieces
1 tbs yellow curry
One cup of lentils makes approximately two portions, to 1 cup of lentils you will need about three cups of water – 1 part of lentils with 3 parts of water. Put water and lentils in a pan, add the other ingredients after it cooked for a few minutes, under low-temperature mix everything starting with carrots and onions, add curry, garlic, salt, and chili and let it all cook slowly until you have the consistency you like.
Eat as it is, can be stored in the fridge for up to three days.
